Bolognese Loaded Flatbreads Do you ever find yourself repeatedly buyingmince and then thinking, now what? If you’re anything likeme, it usually turns into a Bolognese or a cottage pie, but this is a great way to either use up leftover Bolognese sauce or simply change things up a bit with lovely, fluffy homemade wraps. The wraps can even be packaged in foil and taken on a picnic! Serves: 4 Prepare: 15minutes Cook: 30minutes 220g plain yoghurt 260g self-raising flour, plus extra for dusting 500g beef mince 500g passata 1 handful of grated Cheddar 1. In a large bowl, combine the yoghurt and flour and bring the mixture together to form a pliable dough. If it’s too wet, add a little extra flour; too dry and crumbly, add a little extra yoghurt. 2. On a floured surface, use a rolling pin to roll the dough into 4–6 flatbreads, then add them one at a time to a frying pan with a little oil over a medium heat. Once the bread starts to bubble and puff up, it’s ready to flip. Cook on both sides until cooked all the way through, then set them aside. 3. Rinse the pan out then brown off the mince with a little oil and cook until the liquid has evaporated. Add the passata and reduce the heat to a simmer. Stirring occasionally, bring everything to a gentle simmer and cook for 15 minutes, until the mixture is almost starting to dry out. Check for seasoning. 4.
