Hunter’s Chicken Gnocchi This is one of thosemeals to cheer you up at the end of a bad day. Perhaps you made amistake at work, got stuck in traffic, spilt coffee all over yourself on the way into an important meeting, or perhaps your kids are testing your limits.Whatever the scenario, this is bound to turn your day around. Cheesy gnocchi and chickenwith a rich tomatoey BBQ sauce bubbling away – it smells amazing and it tastes even better. Serves: 4 Prepare: 5minutes Cook: 1 hour 2–3 skinless and boneless chicken breasts, cut into chunks 500g gnocchi 2 x 400g tins of chopped tomatoes 100ml BBQ sauce 2 handfuls of grated Cheddar 1. Preheat the oven to 220°C (200°C fan). 2. Add the chicken, gnocchi, chopped tomatoes and BBQ sauce to a large ovenproof dish and mix thoroughly. 3. Scatter the grated cheese across the top and bake for 1 hour, until the chicken is cooked and the sauce is nice and rich. Remove, and you’re ready to serve! HasselbackHalloumi StuffedAubergines Thismight sound a little unusual but it’s delicious and looks quite impressive once garnished. It’s also very simple to make and full of complementary flavour. Serves: 4 Prepare: 15minutes Cook: 50minutes 1. Preheat the oven to 200°C (180°C fan). 2. Add the aubergine halves, flesh-side up, to an oven tray and drizzle generously with olive oil. Bake for 30 minutes, then remove from the oven and gently flip them over. Use a knife to score deep lines into the soft skin, making sure not to cut all the way through. 3. Cut thin slices of halloumi from the block and slot them into each cut you’ve made, reserving the remaining block of halloumi. 4. Scatter the couscous around the aubergines into all the gaps. Pour 1 cup (250ml/8fl oz) boiling water over the couscous. 5. Grate the remaining halloumi across everything and return to the oven for 20 minutes, until the halloumi is golden and crispy. 6. Remove from the oven, scatter with the pomegranate seeds and top with torn mint leaves.
