Don’t use leanmince – this needs fat or themeatballs will be dry. Serves: 4 Prepare: 20minutes Cook: 30minutes Olive oil, for frying ½onion, finely chopped 1 clove of garlic, crushed 100gwhite cabbage, shredded 1 small carrot, grated 2 bay leaves 400g tin cannellini beans inwater, drained and rinsed 200ml hot chicken stock 5 tbsps tomato passata 4 tbsps double orwhipping cream 2 tsps cornflour (optional) 3 tbsps finely chopped dill 3 tbsps finely chopped chives Groundwhite pepper For themeatballs: 500g porkmince 5 tbsps breadcrumbs ½onion, grated 1 clove of garlic, crushed 1 small egg ½ tsp flaky sea salt Freshly ground black pepper 1. First, make the meatballs. Place all the ingredients in a bowl and mix together thoroughly; this is easiest to do with your hands. Shape into 12 equal meatballs. 2. Set a large saucepan (for which you have a lid) over a high heat and add just enough oil to cover the base. Place the meatballs in the pan and briskly brown all over, turning them gently. Remove from the pan and set aside. 3. Using the same pan, make the sauce. If needed, add a splash more oil to the pan, then set it back over a medium heat.
