Ingredients for 2 people 80g Garofalo soup pasta 10 (raw or precooked) tiger prawns 4 small oyster mushrooms 1 large banana shallot, thinly sliced 5 ripe tomatoes, roughly chopped 1 red chilli thinly sliced 1 tsp of galangal paste Small bunch of fresh coriander, roughly chopped 2 lemongrass stalks 2 large lime leaves 1 lime (for slicing and juicing) 500ml vegetable or fish stock 1 tbs of fish sauce Method: Start by heating up a little oil in a pan and gently sauté the shallots for a minute before adding in the galangal, tomatoes and chilli. Continue to cook for another minute. Then add the stock, lemongrass, fish sauce, mushrooms, Garofalo soup pasta of your choice and prawns (if they’re raw) and cook for a further 5 minutes or until the pasta is al dente. Finally, pour in the juice from half the lime, add in the lime leaves and half the coriander (and prawns, if they’re precooked) and season to taste (adding a little sugar if it’s too sour). Remove the lemongrass stalks, divide between two bowls and finish with a slice of lime and the rest of the coriander. Tom Yum Pasta Soup!
