In this version, though, we’re giving crumpets the toastie treatment and topping them with tangy cheese sauce and shredded hamhock – curl up on the sofa and enjoy. Makes: 8 Prepare: 15minutes plus resting and rising time Cook: 20minutes For the crumpets: 125g plain flour 125g strongwhite bread flour 3.5g fast-action dried yeast 1 tsp caster sugar 1 tsp salt 250ml wholemilk, lukewarm ½ tsp bicarbonate of soda 100ml lukewarmwater Sunflower oil, for brushing For the cheese sauce: 25g unsalted butter 25g plain flour 200ml wholemilk 125gmature cheddar, grated 1 tsp Dijonmustard 2 tspWorcestershire sauce 1 egg yolk Salt and freshly ground black pepper To serve: 125g shredded hamhock Chilli sauce or pickles 1. Make the crumpets. Combine both the flours, with the yeast, sugar and salt in a mixing bowl and, using a balloon whisk, mix to evenly distribute the ingredients. 2. Add the warm milk and whisk for 1-2 minutes, until the batter is smooth. Cover the bowl and leave at room temperature for about 1 hour until the mixture has almost doubled in volume and the surface is covered in airy bubbles. 3.
